I am finally back to reality, I visited my family over the weekend to celebrate Christmas early. We made tons of cookies, fruit cake, fudge, and so much more. I love baking in the kitchen, put some Christmas music on, fill a glass of wine, and make cookies with some of my favorite people… I don’t know what could be better. Each year, I love decorating sugar cookies and sneaking the occasional piece of fudge but there is one cookie above all that is my favorite…
Any Christmas party I go to or cookie tin that I receive, never has my favorite cookie in it, my Mom and my Aunt are the only two people I know that make Pizzelles. A Pizzelle is a traditional Italian waffle cookie, that can be made with either Vanilla or Anise (we make them with Anise). They are thin and crisp, and crumble in your mouth. They are really decorative, and taste amazing.

If you are thinking no, you are missing out. The recipe is so simple and these cookies are by far the easiest cookie you will ever make.
PIZZELLE COOKIES
WHAT YOU NEED:
- Pizzalle Iron
- Cooking Spray
- 6 Eggs
- 3 ½ Cups Flour
- 1 ½ Cups Sugar
- 2 Tbsp. Anise
- 1 Cup Margarine, melted
- 4 tsp. Baking Powder
WHAT TO DO:
- Beat eggs, adding in sugar gradually. Beat until smooth.
- Add cooled margarine and anise.
- Sift flour and baking powder, then blend into egg mixture until smooth. Dough will be sticky enough to be dropped by spoon or cookie dough scoop.
- Heat Pizzelle Iron.
- Once Iron is hot, Spray Iron to prevent dough from sticking, scoop a ball of dough about an inch in diameter and place on the center of Iron. My Iron has two waffle sections and I can make two Pizelles at the same time.
- Once dough in placed in the middle of waffle section shut the top of the iron and press the handle together and release after a few seconds to ensure the dough spreads out but not so long that the cookie is too thin.
- The dough will only need to cook about 8-10 Seconds. Use a plastic fork or mini plastic tongs to remove the cookie and place on drying rack.
- Once cookies cool you can stack and move to a plastic/glass container to keep fresh.
This is not a recipe you can multitask with, it’s so easy to burn these cookies as they only take a 8-10 seconds to cook.
