Now that I have been cooking for a while, I have really taken on my mom’s way of cooking. Meaning, recipes are just a suggestion, I throw in a little of this and a little of that. My friend Natasha and I love to make dinner together to try out new recipes, and honestly to have an excuse to finish off a few bottles of wine. We made a Creamy Lemon Langostino Pasta dish. It was so delicious and the creamy lemon is the perfect flavor for spring. We combined several different recipes and just threw in what sounded good. SO when I shared it on my Instagram stories and got requests for the recipe, there really wasn’t one… until now.Continue reading “CREAMY LEMON LANGOSTINO PASTA RECIPE”

Fall is in full swing in Chicago. Nothing gets me more in the fall spirit than festive comfort food. This recipe is easy and full of flavor. I have honestly never cooked pumpkin but wanted to incorporate it into this recipe, what is more fall festive than a pumpkin, right? Unfortunately, the grocery store didn’t have pumpkins available… other than canned pumpkin. So, I resorted to butternut squash.
Squash always reminds me of my grandpa, he used to have the biggest garden in his backyard and grow everything, including squash. When we visited, he always made the best squash muffins and had tons of mashed squash in the freezer, I was hoping it was reserved for the future muffins he would send home with me. Since my childhood, I look back to those memories of cooking with my grandpa and all of the delicious things he would make from the garden in his back yard. Living in Chicago, I can’t have a full blown garden just yet but I am excited for the day when I will have my own garden that I can pull ingredients from. Until then, I am forced to rely on the grocery store’s product availability.
Anyways you didn’t come here for my reminiscing, scroll down for the recipe and enjoy!Continue reading “CREAMY PARMESAN SQUASH PASTA”
I am hoping that if I keep making Spring and Summer recipes that it will encourage the weather to warm up! I have been interested in making a spritz cocktail ever since it hit Instagram like crazy last year. Unfortunately, I was in the process of moving and adjusting to life in Chicago, so I didn’t get the chance to try it out. I posted a Spritz photo to my Instagram and got several questions about how to make it or what recipe I used. As requested, here is the Aperol Spritz recipe I use.Continue reading “SPRITZ COCKTAIL”
