If you don’t get excited about a full day of eating tacos, we can’t be friends. I’m kidding (not really), but tomorrow is Cinco de Mayo and I am pumped! Most people love margaritas… I just can’t do it. I feel like everyone has that one alcohol that they say “never again” to, for me that is tequila. I can’t stand the smell or the taste so I am all about daiquiris and mojitos!
This recipe is intended for a pitcher because it’s so good, you are definitely going to drink more than one. It’s also pink, what’s not to love?
It’s finally time to put the plants I have been growing to good use, I grow herbs in my window and my mint was getting a little wild, that’s a sign it’s time to make mojitos. (I did a blog post about apartment gardening, click here to see the post) Make sure when you muddle all of the ingredients that you don’t mush the mint leaves. You just want to crush them slightly so the flavors release and mix with the lime.
This recipe is SO easy to make, but I thought that since watermelon is so easily mashed, I wouldn’t need a blender. I seriously avoid using a blender because it’s a pain in the butt to clean, but you NEED a blender for this… mashing with a fork does not work. That may be obvious to the average person, but sometimes I am the furthest thing from average.

SKINNY WATERMELON MOJITO RECIPE
WHAT YOU NEED:
- 4 cups watermelon (seeded)
- 2 limes, juiced
- 16 mint leaves (approx.)
- 4 oz. White Rum (or to taste)
- 16 oz. club soda
- 2 tsp Sugar (optional)
- In a blender, process watermelon until liquid and pour into pitcher
- In mortar and pestle, muddle lime juice and mint leaves together (add sugar in with mint & lime juice if you are choosing to use sugar). Pour in pitcher with the watermelon.
- Add ice and stir in rum and club soda.
*Garnish with lime, mint leaves, or watermelon.
